Spirulina was a food source for the Aztecs and other tribes of Mesoamerica until the 16th century, harvesting from Lake Texcoco and the subsequent sale of harvested algae in the form of characteristic green cakes were described by one of the soldiers of Cortez. The Aztecs called them tecuitlatl [3]. Despite the fact that according to the results of the works made in the 1960s, French studies Lake Texcoco was still rich in spirulina, descriptions of the use of spirulina as a daily source of food for the surrounding tribes after the XVI century are absent. As possible factors, the emergent after drying of the surrounding lakes for the sake of a larger farming food alternative, as well as the gradual urbanization of the region. Also spirulina is traditionally harvested in Chad, from the numerous lakes and ponds surrounding Lake Chad. The algal mass is pressed into cakes called dihé, which are used later for direct consumption, and as an ingredient for cooking soups.
