Lecithin is a dry powder of lecithin, a fatty substance that is a mixture of phospholipids (phosphatidylcholine (19-21%), phosphatidylethanolamine (15-17%), inositol-containing phosphatides (10-12%) and phosphatidylserine (0.5-1 %)) with triglycerides and a small amount of other substances.
